Soft pressing of whole grapes not destemmed fermentation in steel at a temperature of 18 -20 degrees with indigenous yeasts, subsequently after racking, the batonnage technique is applied. At the beginning of February we press the Garganega grapes for the passito, a part of the must obtained is added to this wine. The mass thus obtained is bottled. The second fermentation takes place in the bottles horizontally

My father was a farmer, and he transmitted to me his passion for our land, but the first 10 working years, I’ve started in the industrial environment.   One day I found the vines of Santa Colomba, located in that wonderful park, a creation of prince Giovannelli: I fell in love, but time was not there yet…   University of Oenology in Verona in 2003, then a meeting with Loacker (the one from the wines, not the wafer’s one…) Seven years with him in Montalcino, and an experience in the valley dell’Agno with Franco Masiero.   Then a transfert in Lugana, to my university collegue Alessandro Cutolo.   Finally I return to the origin of everything: Santa Colomba, and a new beginning…
