The grapes are destemmed and fermented in wooden vats without temperature control, maceration can be 15 to 30 days long according to the vintage and in some vintages can be longer if we decide to end with a submerged cap. Two years in big wooden vats and then 5 years in bottle.

I started to assemble San Fereolo estate, a winery made by small vineyard parcels spread out in the area of Dogliani, in 1992. In 2004 I begun applying the principles of biodynamic viticulture after a week long course at Fattoria Zelata- Cascina Orsine with the help of Stefano Bellotti, and I’m still going on today. The wines have a classical approach and don’t want to be fashionable and easily recognisable as natural wine. It’s my story as a wine drinker and my critical nature joint togheter with the full respect for the history and the tradition of Langhe wines.
