Additional Information

We elaborate in a natural way, with a manual harvest in 250 kg containers. Grape entry into cement cups by pre-fermentation film maceration, without stem, for a few days. Wild fermentation starts in the same cup at a controlled temperature, and we transfer it to old acacia barrels at mid-fermentation, to finish it inside the barrel. It will age about a year in the same barrels and their mothers, without any transfer. Before the next harvest, we release barrels to decant the wine and let it rest a little more in a cement cup again.

We bottle without any intervention or addition, in a descending moon.

We are fourth generation farmers since 1892, organic winegrowers since 1999 and biodynamic winemakers since 2013. Currently my father Jordi Parera and Ruben Parera, we take care of different small plots of vineyard, along with other ancient cultures cherries, almonds, olives and vegetables garden.All with a small production of honey from our own bees.All cultures biodynamic agriculture, because our farm is compact. Our own vineyards are in the Upper Penedès, with calcareous-clay soil, low rainfall and Mediterranean influence over 350 meters from the sea, with old vines over 78 years and other young vines, training in traditional and modern. Our wines Xarel.lo, Sumoll and other varieties are made with minimal intervention winemaking cellar.Manual harvest without corrections to the must, without the addition of sulfur at the entrance, with native yeast fermentation in cement tanks under land, jars of clay and steel tanks unfiltered microbiologically, and all biodynamic precepts. All of our wines, both young and old rush its organic part in the cellar, thanks to the passage autumn and winter in tanks below ground with cement.
