The company mantra is the enhancement of the territory: the vineyard entirely conducted in a biological regime moves in
a biodynamic direction. Each agronomic practice is in fact performed manually in the total respect of the vine, its
balances and its productivity. "In addition to avoiding irrigation - explains Andrea - we adopt natural microorganisms
that promote soil biodiversity and fertility, supporting the plant when necessary. These are treatments that work."
To complete the biological vocation, the solutions adopted in the cellar come into play which do not provide for
clarification, filtration and no addition of yeasts or enzymes for winemaking.
"We are not looking for numbers but quality and natural refermentation in the bottle rather than a choice is a sine qua non
condition". The first two experiments of Podere Cervarola di Grasparossa in purity, the Rondinina like the swallows that
populate the countryside and the Cenerino like the bird that watches the lake of the farm every day, recover old wine traditions,
