something
We are in Tarano (Rieti) in Lazio, precisely on the western edge of the Sabine Mountains, sheltered by the Lazio pre- Apennines and right on the border with Umbria. Our land is located at an altitude of about 300 m s.l.m. and the vineyards have their roots on soils characterized by a succession of clays, sand, silt from the Plio- Pleistocene period. All our wines are the result of the work of the hands in the vineyard and in the cellar, without any other external intervention. Spontaneous fermentation with indigenous yeasts, no temperature control, no enzymes or yeast added, the wine is not filtered, no sulfur dioxide is added. Podere Sassi is a farm born from the memories of a child, now grown up, who breathed those smells and touched that land with his paternal grandfather, many years ago. It is a special land, it is a land that speaks to my ear and heart. Podere Sassi is a beautiful terrain with a fortunate position overlooking the surrounding valleys of the lower Sabina. It is an organic farm and has a very pure, decisive, uncompromising approach, aimed at not touching what beautiful nature does by itself much better than us men. Pesticides and any other artificial intervention that does not follow our philosophy are banned. Company proudly registered in the SABINA DOP as an olive grower. OTHER products: ORGANIC EXTRA VIRGIN OLIVE OIL DOP SABINA. The Frantoio, Leccino and Moraiolo quality olives generate a superlative quality extra virgin olive oil. The pressing is obviously cold, the mill is certified organic and the DOP SABINA is synonymous with one of the best Italian oils, an area where excellent oil has been made for over 2600 years.
