Additional Information

Vines: 70% Sangiovese and 30% Procanico Fermentation and ageing for red grapes: following a careful selection, the grapes are stemmed and undergo spontaneous fermentation for about 10-15 days in steel vats, with pigeage three times a day. Ageing for approx. one year in steel and fiberglass vessels. Fermentation and ageing for white grapes: selection and whole-bunch soft pressing, followed by spontaneous fermentation in steel containers at a non-controlled temperature. Aged on the fine lees in steel containers for approx. 6 months. Malolactic fermentation carried out in the spring following the harvest, without the addition of adjuvants. No filtering during the bottling process; small amounts of sulphur may be added if required. The natural composition of the wine is not altered by any treatments. Aged in the bottle for approx. 6 months.

We moved from Rome to change life in 2011. Now we are a small-batch winery of nearly 4 hectares, which we planted from scratch between 2009 and 2017. Our vineyards, which sit on unspoilt land at an altitude of 600 m a.s.l. (with the red grape varieties facing south-west and the white grape varieties facing north), are the result of a rigorous massal selection. We only planted local varieties of this land we nicknamed the 'Trivium' (the crossroad where Lazio meets Umbria and Tuscany) - sangiovese, grechetto rosso, procanico and other minor varieties. No chemical fertilisers are used, and the soil (with a sand matrix and rich in clay, calcareous and sandstone marl mainly composed of quartz granules) is nourished using mixed flower green manure and biodynamic preparations. Weed control and most of the work in the vineyard is carried out by hand.
