The company was founded in 1998 by Evangelos Paraschos, of Greek origin, a winegrower in San Floriano del Collio (GO) since 1979. He is assisted by his sons, Alexis and Jannis, in the production of wines according to the ancient winemaking tradition of Collio and the Vipava Valley. Always careful in the cultivation of vineyards to respect the environment and the plants themselves, since 2003 no chemical adds are used in the cellar. The grapes, healthy and ripe, are deprived of the stalks and left to macerate with the skins in open vats, without temperature control and without the addition of sulfur dioxide. Fermentation occurs spontaneously, without the inoculation of external selected yeasts. A long aging in large oak barrels on its own lees follows . In the new cellar, built in 2003, industrial yeasts have never been introduced. They have therefore managed to select a strain of indigenous yeasts that from year to year differentiate their wines making them recognizable and unique. There are many labels with which they are offered on the market, from the native ones, such as Ribolla Gialla, Friulian tocai and Istrian Malvasia, to the most well-known international varieties, such as Pinot Grigio, Sauvignon, Chardonnay and Merlot.
