      Our vineyards grow on rolling hillsides, which have a wavy appearance – hence our name (‘Papari’ means horse mane in Georgian). We have been in conversion to organics since 2014 (controlled by Caucascert) and produce our wine using the Kakhetian method, in the village of Akhasheni. We ferment using naturally occuring yeasts.
