Papari Valley -2 Terraces, Qvevri, Saperavi, 2016

The name of Papari Valley comes from characteristics of the territory of vineyards. Papari in Georgian means mane of the horse. The vineyards are situated on a mountain’s sloppy ground, which has wavy relief. Production is made by standards of bio wine. Company is controlled by “Caucascert” since 2014 (CAUCASCERT Ltd is accredited by the independent IAF MLA signatory accreditation body DAkkS (Deutsche Akkreditierungsstelle) in Germany). In the year 2019, we received the bio certificate for the vintage of 2018 for half of the vineyards. Starting from the vintage of 2019 the whole vineyards will be officially certified. Wine is produced in village Akhasheni by Kakhetian method. Fermentation is finished by naturally occurring yeasts. No artificial intervention in the process is made. The overall area of vineyards is 9.3 hectares (Including in vines- 8.5ha). Varietals: 80% Saperavi and 20% Rkatsiteli; -Caller: There is a system of three terraces of qvevri (the traditional Georgian way of making wine in buried clay vessels called qvevri is a UNESCO listed tradition.). First and second terraces are placed in the zone of marani, and the third one in the basement. Transfusion of wine from one terrace to other happens by gravity force, without electromechanical pumps. Wine “Qvevri, 2 terraces” is produced using the first and second terraces of qvevris. Wine “Qvevri,3 terraces” is produced using three terraces of qvevri. The marani of “The Papari Valley” is situated in the vineyards.
