Additional Information
A field blend of Pinot blanc (69%) and Chardonnay (31%) grown on the blue clay soils of the Crouch Valley, Essex. The fruit was slowly pressed, whole bunch in a traditional wooden basket press before being transferred to a single 1500 litre foudre. Following two years of fermentation and élevage, the wine was bottled directly from the foudre via gravity. Bottled with respect to the lunar calendar and with no additions.
