Additional Information

Dense fruit and spice. Nose of schist flowers. Aged tannins on french oak. A complete wine. A wine meant to live and be alive just as the vineyards it comes from. So store and drink it around 15 °C. Natural sediment may appear but does not affect quality. Just decant. Assembled from equal parts 2018, 2019 and 2020 barrels.
something
Handmade organic wine from Banyuls with no nonsense. Just a lot of work, sanity and knowledge. All home-grown grapes - a personal connection to a living soil is in my opinion the first and foremost important step in producing an honest wine. Our yeast comes from our vineyards, as does our grapes, and the limit of intervention is adding the minimal amount of sulfites possible in order to suit my personal quest for perfection in winemaking. This is not to confuse with a "laisse-faire" attitude, but rather a "savoir-faire" attitude. We do our utmost in every step of our vineyard and cellar work to ensure the quality of our fermentation before they even start. From understanding the utility of our local biotope in our vineyards to the paramount importance of the cleanliness of cellar tools. Everything we do throughout the years is a part of preparing our grapes to become perfect wine by themselves.
