Il Roccolo di Monticelli is a young and small really, born out of a desire for recover an old family vineyard on the limestone hills between Verona and Soave, inside of a small “clos”. Here an old vineyard, dating back to the 60’s, grows beside of an area with thousand-year-old olives. The admiration for our land make us working with the maximum respect for the soil and the biodiversity, and create genuine wines completely related to the land in which they are.My purpose is to get out of it a simple and natural wine, like it was made in the past, without using any additional wine products and without doing any invasive process.In the vineyard I have got plants of Garganega and Trebbiano di Soave, the typical with grapes of my land, that has got more then 70 years old. Then I have also some red grapes like Corvina and others Valpolicella’s typical grapes. I have decided to work everything, from the vineyard to the cellar as natural as possible. In my vineyard I use only sulphur and copper, in a very low concentration. I don’t use herbicide, I don’t use irrigation and fertilizers. In the cellar, the wine starts with a spontaneous fermentation, thanks to the native yeast on the grapes’ skin, I don’t’ add sulphites never (we have 2 mg/l) and I don’t use filtration and clarification.
