Rosso di Contrada don Pasquale: this wine is linked to the family affections. It is obtained from a vineyard of Nero d'Avola of half hectare exposed to the north on white limestone soil, with a good presence of skeleton (rock). It lays at 70 meters above sea level, the exposure to the north gives this wine a remarkable freshness that gives it a vertical impulse in the pleasantness of its fruit. It is often accompanied by salty notes. It ferments with the whole berries in steel tanks for about 20 days. It matures for ten months in steel tanks and ages for six months in bottle. Sulfur dioxide is self-produced under 10mg / l. The product does not contain any oenological additive.
