Single orchard cider (« cuvée parcellaire ») This "parcellaire" cuvée is a blend of 2 bitter and bittersweet varieties typical of the Cotentin region: 2/3 Petit Amer (bitter variety) and 1/3 Binet Rouge (bittersweet variety). At the tasting, it reveals a perfect balance between bitters, sugar and acidity, as well as a strong tannic structure. The nose offers subtle aromas, slightly smoky, with fresh apple and iodine iodized notes. On the palate, we find a beautiful bitterness with a great freshness brought by the residual sugars. Complexity and structure for this cider of soil with a great potential of guard. Natural and living cider. A cider made from slow fermentation on indigenous yeasts and whose froth is produced naturally in the bottle (natural fermentation in the bottle).
