Vinification: Grapes are hand-harvested early in the morning into small open crates Pneumatic pressing and gentle racking. Natural fermentation (with indigenous yeasts) Fermentation and ageing in stainless steel vats for 6 months
The vineyard is seventeen hectares. The parcels are spread around five villages: Montpeyroux, Saint-Saturnin, Jonquières, Lagamas and Saint-André-de-Sangonis, allowing me to profit from the individual characteristics of each different terroir. It is also a certain protection against the vagaries of the climate, as it is rare for the same phenomenon to occur in all areas at the same time. Year after year, I have progressively increased production, passing from 2,000 to 50,000/60,000 bottles in 25 years. My work began to gain recognition in 1995, when the Gault Millau guide awarded a mark of 18.5 to one of my wines after a blind tasting. International markets opened their doors to me, then little by little my reputation grew in France too, where my wines now appear on the very best tables.
