Additional Information

Fermented in open top stainless steel fermenters. Punch downs for about 3 weeks. Pressed off and put to neutral 500 L barrels. Aged for 16 months on the less. Racked to tank and bottled. This bottling consisted of the sandy section and the diatomaceous section.
