All contracted farmers abstain from employing pesticides and chemical fertilizers, relying solely on plant-based compost. Our distinctive high-temperature yamahai method is utilized for all brews, with yeast-free additions introduced from R2BY (2020) onwards. Furthermore, our brewery maintains stocks of sake aged over 50 years.
