Il Roccolo di Monticelli is a small really, born out of a desire for recover an old family vineyard on the limestone hills between Verona and Soave, inside of a small “clos”. Here an old vineyard, dating back to the 60’s, grows beside of an area with thousand-year-old olives. The admiration for our land make us working with the maximum respect for the soil and the biodiversity, and create genuine wines completely related to the land in which they are. My purpose is to make simple but with stong personality wines, representative and strongly related to the place in whitch the vines are growing. We only work with local varieties such as Garganega and Trebbiano di Soave, the typical white grapes of Soave, and Corvina Corvinone Rondinella Molinara Oseleta, Valpolicella’s typical grapes. We don't have irrigation and we don't add fertilizers. We started working with biodynamic in 2019 to increase the fertility of the soil and to helps vines to get stronger. In the cellar, the wine starts with a spontaneous fermentation, that always happens with the skin, the time of skin contact depends from wine to wine, from vintage to vintage. We are not using any additional products and we are not doing any invasive process, we never add sulphites (we have 2-5 mg/l) and I don’t use filtration and clarification.
