Fattoria Mani di Luna was born from 3 friends (Rocco Trauzzola, Simone Lazzarin e Alessandro De Filippis) that started conducting in management a farm of 30 hectares in Umbria only for pure passion and love for agriculture and nature. We are in Torgiano at 200-350 meter above sea level, area planted with vines since the time of Etruscans. The vines are planted in sandy soils over sandstone and marl rich in minerals and sediments left by the ancient lake Tiberinum. We have 7 hectares of vineyards in total of wich 3 hectares of old trees planted from 1970 to 1980, the other vineyards were planted from 2005 to 2012. We grow only native grape varieties as Sangiovese, Grechetto, Trebbiano, Malvasia, Barbera and Sagrantino. The cultivation of all land is certified organic by Suolo e Salute and since 2012 we start to practice biodynamic agriculture using herbal teas, 500, 501 and biodynamic compost. We make dynamization by our hands and spray the 500 and 501 with a small pump in the shoulder. We practice green manure in the vineyard with legumes and other plants in order to feed the soil and stimulate biodiversity. We follow the biodynamic calendar of Maria Thun for tilling the soil, sowing , transplantation and for decanting cellar. Our methods of winemaking craft requiring close physical contact with the raw material, the grapes; through the hands and respecting the lunar cycles we follow the transformation of grapes into wine. The grapes are harvested by hand in boxes of 18 kg. The wines are produced with traditional methods such as manual de-stemming and crushing with female feet. The fermentations are conducted without addition of selected yeasts and without temperature control. We add only small amounts of sulfites without adding any other chemical product to express the terroir in a natural way.
