Spontaneously fermented made from New York State honey,carbonically macerated whole tart cherries, and pressed cider apples, which are fermented together for 12 months before being infused with hand-picked sumac and rose hips. After aging for another six months in wood barrels, this bone-dry mead goes through a second bottle fermentation that produces its lively effervescence.

We have two production locations, one on a family farmstead in the Hudson Valley and the other in Bushwick Brooklyn.
