"This spicy lil' rustic California Red Wine would play a fine countertop companion as you toss, stretch and bake yourself an East Coast-style pie; not New York or New Haven but rather Philadelphia or South Jersey although Detroit or St. Louis could work in a pinch with an ample topping of home made sausage. Lightly extracted for what is basically a gentle marinade brings out plush cherry and sweet berries with a harmonious interplay of acid and tannin. Vibrant fruit frequencies show the depth of care coming out this thoughtfully maintained vineyard in Los Olivos. This wine likes to breathe so decant if you would like and know your bottle may taste even better on day 3."

It is our belief that within the imperfections cider, wine and life become perfect. durham cider + wine co. utilizes nature’s generosity through the magical meanderings of natural fermentation. The fruit is allowed to speak and then gently guided towards balance without manipulation. The focus is to produce an honest and sincere beverage. It is not so much about technique but rather getting in tune with the energy surrounding the fruit to discover the preferred mode of transport for the upcoming journey into bottle. Laying out an itinerary based on desire won’t produce poetic results. The goal is to dissolve the conscious mind allowing intuition to then take over. This helps create the conditions for amazing things to happen. It’s big intention with mere intervention. We are simply a conduit guiding fruit towards realizing it’s true purpose with an end product that is not fully of our responsibility. Observe, facilitate then wait. It will happen. We have spent many hours planting, observing and caring for fruiting trees, bushes and vines all while focusing on soil regeneration. All of the vineyards, orchards, ranches and farms we associate with are worked organically or beyond. We believe that for a cider or wine to truly become a beautiful beverage it should be openly available in a welcoming manner to all showing interest.
