Additional Information
Our vineyard is located in a pristine mountainous environment (800m altitude) within a forest, with no any other human activity nearby. We farm exclusively only in our vineyards, ancient Greek grape varieties that we saved from extinction. All the farming process is completely natural and certified organic and we vinify only our own grape produce. Our wine produce is entirely natural. Our vinification method is unique and follows a family tradition of more than 300 years. This method includes vinification inside an old open wooden tank with fir tree branches and stones from the local river on top for cap management. Only natural yeast is used and we totally avoid adding any sulphites, chemicals or preservatives. Also, we avoid using any intervention method during the vinification process. The vinification of “Malagousia” and “Mountain Roditis” grapes, gives valuable ingredients in white wine and a shiny orange color. The Bottling process of this wine is performed usually 4-7 months after the harvest.
