Our domain is about 3 hectares in size, on which we grow mainly Riesling, but also Pinot Gris, Pinot Blanc, Chardonnay, Gewürztraminer, Pinot Noir and some others. Although the Netherlands are famous for their flat appearance, our region is hilly and our vineyard is located on a south-facing hill, containing limestone practically directly below a thin layer of löss topsoil. We strongly believe in the principle of making a wine in the vineyard, rather than in the cellar. Basically since the start of our operation (some 20 years ago) we have been focussed on soil quality (soil foodweb) and plant health, rather than optimising yields in volumes. We apply compost extract and foliar fertilisers only (no copper, no sulfur) and developed a method for larges-scale application (FREESOIL.eu). With that approach, we see that high quality wines develop almost by themselves in our limestone cellar. Fermentation takes place by method of Pied-de-cuve and lactic acid fermentation occurs naturally. Non of our wines are filtered or clarified. As much as we can, we store our wines in old German oak barrels for micro-oxidation. At Domein Aldenborgh we produce authentic, honest and tasty wines while having respect for nature around us.
