Thierry also uses an ancient and unusual grape variety for this wine: The "Terret" Alcohol: 12% Suitable V&V VINIFICATION manual harvest, the grapes were gently pressed in an old, horizontal Vaslin ‘pressoir à vis” (screw press), before being fermented in 15-Hecto-litre resin vats, with wild yeasts for two weeks. 11-12 months of ageing, on lees, in used (used already for four wines) 228-litre oak barrel. The wine was racked at the time of the wine’s transfer into oak barrel for its ageing (in March). TASTING NOTE: Salty, aromatic, citrus, structure, no oak, fabulous to drink.

Thierry is 3rd generation winemaker and one of the first producers of organic wines in the Languedoc. He continues his grandfather’s legacy of preserving amazing ancient varieties (Oeillade and Ribeyrenc vines). His vines are southwest exposed and soils are composed of loose brown schist, which produce lighter and early-drinking wines.
