Alcohol: 13.5% Bottle size:75cl Average age of vines:30-50 years • Fifteen days of maceration, (on whole grapes) to extract the colour and the tannins • Wild yeast fermentation, without temperature control. • The must was pressed in a pneumatic press. • 6 months of lees-ageing (without lees-stirring) • 100-year-old old oak barrel of 3000 litres • This wine has had NO contact with sulphur at all (none was added at bottling). • Full malolactic. Tasting Note: Colour: bright garnet. Nose: subtle notes of ripe red fruits (raspberry jam, elderberries, enhanced by hints of violets, clove and toasted almonds. Generous, fresh and vivacious on the palate. Finish: ripe, well-integrated, yet firm tannins hemming in distinct flavours of redcurrant jam and blackcurrant and Morello cherry, yet a definitely saline impression tops off the finale. Regarding the control of the temperature during fermentation, the Fricks explain that, if, indeed, the temperature rises high during a wine’s fermentation, they will stand back and will not intervene, they prefer to let nature run its course, because the high temperature will prevent any undesirable bacteria that might be present from doing their damagethey put their trust in nature completely.

The Pierre Frick Estate has had close ties with the wine area for twelve generations, and looks after 12 hectares (30 acres) of vineyards today. In order to accomplish the different tasks, six persons work full time. Our vineyards make up a sort of patchwork with a dozen calcareous dominated local soils over 15 km span. The Bergweingarten, Bihl, Rot Murlé, Strangenberg each reveal distinctive soil tastes. The Steinert, Vorbourg and Eichberg Grands Crus are our most famous soils. We have practiced organic farming in our vineyards since 1970 and bio-dynamic farming since 1981.By applying bio-dynamic preparations, the earth’s, the plants’ receptivity develops, with regard to their environment : soil, climate, solar and lunar rythms, etc. Grapes are picked and selected by hand. The juice is fermented using only indigenous yeasts. Because there is no added sugar (chaptalisation), no correction to acidity levels, no physical treatment, each cuvee is a faithful and balanced reflection of the vineyard site, the vintage and the treatment of the vines during the year. Firs sulfur free wines in 1999. Today 90 % of the wines are bottled sulfur free. We do not “make” the wines, rather we allow them to develop their own lively, healthy and authentic character.
