Tasting Note: Colour: bright garnet. Nose: subtle notes of ripe red fruits (raspberry jam, elderberries, enhanced by hints of violets, clove and toasted almonds. Generous, fresh and vivacious on the palate. Finish: ripe, well-integrated, yet firm tannins hemming in distinct flavours of redcurrant jam and blackcurrant and Morello cherry, yet a definitely saline impression tops off the finale.
Regarding the control of the temperature during fermentation, the Fricks explain that, if, indeed, the temperature rises high during a wine’s fermentation, they will stand back and will not intervene, they prefer to let nature run its course, because the high temperature will prevent any undesirable bacteria that might be present from doing their damagethey put their trust in nature completely.
