Additional Information

Terroir: Boutenac is a special terroir with poor soils on a limestone base. Known locally as Corbières' “golden triangle”.

Vinification: Grapes are hand-harvested with a selection of the best vines. Grapes are destemmed and fermentation starts naturally in stainless steel vats. Old barrels (3 to 5 fills) are filled by gravity where the must finishes both alcoholic and malolactic fermentation. Wine is aged for 17 months. Only the best barrels will be blended to create this wine. No fining and no filtering. Alcohol: 14.5%

Xavier and Mathieu Ledogar cultivate 20 hectares of vines planted all around the village of Ferrals-les-Corbières. They use organical and biodynamic methods. Instead of machinery, horses plough the fields and donkeys keep the weeds in check. The Domaine was certified organic by Ecocert in 2006.
