Additional Information

Vinification: Grapes are hand-harvested, destemmed and crushed by foot. Grenache is vinified separately. Carignan and Mourvedre are blended and fermented together. Controlled temperature during the fermentation at around 22 degrees. Must is tasted daily to decide on the length of the fermentation. Wine is aged in stainless steel tank without sulphites. No fining, no filtration, 2gr/l of sulphites added at bottling. Alcohol:14%

Xavier and Mathieu Ledogar cultivate 20 hectares of vines planted all around the village of Ferrals-les-Corbières. They use organical and biodynamic methods. Instead of machinery, horses plough the fields and donkeys keep the weeds in check. The Domaine was certified organic by Ecocert in 2006.
