Our process, both in the vineyard and in the cellar, is based on the same philosophy as the legend of the Hummingbird. (http://sechangersoi.be/5Contes/colibri.htm). The Hummingbird is the symbol of the sower of life on Earth. It represents courage and wisdom. The domain, which has belonged to the same family for 5 generations, is composed of 25 hectares of vines divided into approximately 50 plots on terroirs of gneiss, orthogneiss and gabbro. We grow four red grape varieties (Gamay, Cabernet Franc, Abouriou and Côt) and two white (Melon de Bourgogne and Folle Blanche), which we tend in a traditional way. We apply the “4 façons”. During active vegetative growth, we use natural treatments, such as sulphur, copper, herbal teas, and such like. The domain has chosen to farm biodynamically, which helps the vine catch favourable natural energies so that it can flourish by nourishing both its underground (roots) and aerial parts (flowers, leafs, fruits). In the cellar, we don’t add yeast in our wines; they ferment thanks to natural yeast. We vinify the cuvées from 1 to 4 years in cement tanks.
