Located at the gates of Carcassonne in the commune of Ventenac-Cabardès, Guilhem Barré cultivates with passion since 2008 its 6.5 ha of vines at the foot of the foothills of the Montagne Noire. It is with a deep respect of the alive and the strong intention to promote his soil that he immediately adopts organic farming. In just a few years, he has propelled his wines to the top, and restores his nobility to a small name lost between Atlantic and Mediterranean. At Guilhem Barré, the vines are grown in organic farming, without chemical fertilizers or weed killers, preferring inputs of organic matter and plowing to keep the soil alive. The protection of the vineyard is carried out exclusively with organic products. Any synthetic product is outlawed. This respect of the soil allows a good conservation of yeasts found naturally on the skin of the grapes. Fermentation takes place without the addition of industrial yeasts. The result is wines without artifice, marked by their original terroir.
