Alcohol: 14.5% Bottle size: 75cl Certified Organic - Suitable for vegetarian only Average age of vines: 50 years Hand harvest into small boxes–allows the grapes to arrive at the winery intact. Part whole bunch/partially destemmed. Trodden by foot. Natural yeast, traditional fermentation for 7-21 days in traditional wooden tanks. At the end of thealcoholic fermentation the wine is pressed. Raised in barrels, in the cellar, for 6-14 months according to the vintage. Racked once before bottling. Tiny amount of sulphur used at bottling. This is a model "Côte de Beaune wine" expressing red flowers (roses, cherry-blossom) and then in the mouth: cascades of stone fruit supported by lively, lacy acidity.

Julien and Carole have taken over Dominique Derain’s Winery since December 2016. In the cellar, minimal handling, spontaneous fermentation, sulphur generally avoided ! The work is done to bring the wines to great finesse and a great brilliance.
