L'Incrédule, 2017

Didier Chaffardon looks after 3.5 ha of vines on the banks of the Aubance. His credo is the good health of his vines so no herbicides or insecticides are used in order to preserve the diversity of the fauna and flora. The vinification is as simple as possible: indigenous yeasts, little or no sulfur, no fining, no filtration. The maturity is a bit the signature of this winemaker as he makes very unique juices that aren’t like any others !
