A delicious Pet Nat (Petillant Naturel) comprised of Chenin Blanc, Pineau D'Aunis, and Grolleau. A lovely sparkling wine made in the methode ancestrale style, meaning the grapes were direct pressed and fermentation finished in the bottle trapping the carbon dioxide naturally emitted during fermentation. The Deboutbertins hand farm these tiny vineyards of 45 year old vines. No machinery is ever used as they are plowed by horse and harvested by hand. Meticulous grape selection, slow vertical pressing, native yeast, and always moved by gravity. Natural winemaking at it's best. No added sulfur. Organic.
