Alcohol: 12% Bottle size: 75cl Age of vines: first vines planted in 2000 The grapes are hand harvested and 50% destemmed and fermented with natural yeast for 10 days before pressing. Fermenting juice from the press is moved straight into oak barrels (barrels are between 5 and 20 years old) where it completes fermentation. The wine is then matured in old oak barriques for 9 months before bottling. Tasting note: Ruby wine. Black cherries, blackberry and red plum with a twist of spice, dried herbs.
