We are very proud to be able to offer you Culinaries gin, our first in-house spirit, the result of our collaboration with the Distillerie du Viaduc, located in Paris, in the 12th arrondissement. The team at the distillery - in the person of its two founders, Théo and Quentin - worked to determine the profile of this beverage, to agree on the recipe and its aromatic dominants. We wanted a very fresh gin, with a clear and straightforward aromatic palette. Once the composition of the macerate had been determined after several trials and errors, the two distillers brought together a bouquet of 100% organic and French plants and spices: always dried plants, to preserve and concentrate the aromas. The maceration of dried plants gives a more flavourful gin. The ingredients are first macerated in 96% wheat-based neutral alcohol and then distilled. As the double distillation has already been carried out to obtain the alcohol, a triple distillation is carried out with the plants, which are left in the macerate to better extract the essential oils. The gin is distilled in one of the two stills of the house. Once the gin has been distilled, it is bottled at the distillery itself, in pretty clear glass bottles of a refreshing aquatic blue.
