Our Estate Viognier comes from high elevation in the Fair Play AVA of southern El Dorado County where the significant diurnal shift and well draining granitic soils yield a wine with both great aromatics and structure. Our Viognier was left on the skins for 5 days and then whole cluster pressed into a stainless steel tank where it underwent a three week fermentation prior to being moved off the lees (spent yeast) into old French Oak barrels. The wine was aged for 7 months prior to being bottled without fining for filtration.
