Additional Information

SEMPITERNEL is an early cider made from a large variety of apples (including Liberty Apple) and summer pears (including Shipova) from the Ruban Bleu orchard.

The pear pomace was then added to the vat for a one week maceration to give tannin and substance. The hops were introduced a little before the end of the fermentation for a cold infusion during 48h.

Sempiternel is a thirst-quenching and lively cider. The hop notes and the freshness of summer apples make it perfect for a festive aperitif.
We rent the experimental orchard "le verger du Ruban Bleu" in Mercier. This orchard who worked from a permaculture perspective has more than 100 varieties of apples, around thirty varieties of pears and many fruit trees. Our cider house is located on the island of Montreal. This is where we make natural sparkling ciders fermented with fruits from the orchard. We also produce ciders in collaboration with organic orchards and other producers who worked with the same philosophy. We produce around 20 000 bottles of ciders . We make About 15 differents cider, such as cider cofermented with plum and pear, cider cofermented with quebec ginger, cider fermented with blackcurrants
