Hand harvested. After direct pressing and light settling, the wine is fermented naturally and then matured in 400 liter Burgundy demi-muids. A slightly spritzy wine, very refreshing and easy to drink! Aromas of fresh hazelnuts accompanied by a slight hint of aging notes brought by the Burgundy barrels. The palate is full-bodied and lively, with a nice fat and freshness.

Lassolle is a small estate (9HA) in southwest France between Sauternes and the Graves vineyards in Bordeaux. Our vineyard is made up of old vines; some over 100 years old. The domaine is cultivated using biodynamic methods, and has been ever since our arrival. We use massale selection, horses in the vineyard, amphorae in the cellar and have always approached our work with a lot of consideration – questioning, experimenting and basing ourselves a lot on our intuition. Our passion and dedication, both amongst the vines and in the cellar, mean that we are always focused on making wine as respectfully as possible – by respecting the soil, honouring our local grape varieties and making our wine without any additives whatsoever.
