Alcohol: 12% Bottle size: 75cl Age of vines: 20/35 years Whole cluster direct press in traditional basket press, natural yeast fermentation in neutral 350 & 500L French oak barrels, 15 months aging sur latte, bottle non-dosé. Aged in a similar style to Les Semblables. This champagne has depth and good finesse, with tense citrus fruits tethered by notable chalky salinity on the finish. 3,000 bottles produced.

About Champagne Clandestin

Champagne Clandestin is a joint project between Bertrand Gautherot of Vouette & Sorbée and the young talented wine-maker Benoit Doussot. Everything at Clandestin is harvested by hand, fermentation are natural with nothing added or taken away. After fermentation the wines are aged in neutral 300L and 500L French oak barrels before aging sur latte for 15 months. To retain the purity of these Champagnes, they are bottled without dosage.
