Cascina Zerbetta is a 7 hectare organic farm in Monferrato, Piedmont. Paolo is a winemaker who studied and practiced to make good wines for all to drink, wines that express the work in the vineyard more than in the cellar, with their own style and unique flavors arising from a physical and emotional connection to the vineyard. Paolo planted the first 3000 meters of vineyard in 1999,restoring an abandoned field, expanding with patience and persistence, to four acres in ten years. The vineyard is now divided into 2,5 ha of barbera, 1 sauvignon blanc, and 0,5 merlot. Soil structure is preserved by grassing and green manuring is used to maintain fertility and to attract beneficial insects. Maintaining a smaller scale operation has been an important decision, enabling Paolo to keep a close relationship with every aspect of the process. From tending to the vineyard to communicating with clients, Paolo has the freedom to work with care and creativity. We transform just our grapes, the one we have followed step by step in the course of the season. The low yield, the exposure and silty clay soil contribute to give body texture and flavour.
