Cara a Cara is a new project that was born during the height of the global pandemic in 2020. The project is hyper focused on a single family - the Morales Garcia family. The project was born after finding out that the family could no longer make this amazing spirit due to a lack of water in their ranch. The production is undertaken by the entire family, and is led by Bacilio, a 4th generation maestro mezcalero. He follows the family's recipe and crafts it following an artisanal production process cooking the agave in underground ovens, with 100% natural fermentation, and double distillation in copper stills. During distillation he uses rainwater for the condensation tank as a means of minimizing freshwater usage. The agaves are sourced from the maestro’s ranch providing a level of traceability that is hard to come by. Cara a Cara has four main expressions, two ensambles and two single varieties. Instead of sourcing specific agave types, the ensambles change depending on what agaves are matured and available to use. The single varieties are based on the traditional mezcales from Morales Garcia’s family recipe book. - Espadin & Tepeztate. All of the mezcales produced are micro-batches between 100- 300 liters per batch. Our aim is to solve real problems with practical solutions. To start, we’ve installed a rainwater capture system to protect freshwater sources. We also give back by donating 5% of our proceeds to Isla Urbana, and NGO focused on enabling water security across Mexico by designing, building, and educating on rainwater capture system in urban and rural areas.
