2021 Vintage marks the first year of making Gamay for Camins 2 Dreams. We harvested the grapes from Portico Hills Vineyard in Los Alamos Valley the last week of September. We fermented with wild yeast with 25% whole cluster inclusion. After fermentation the wine aged in french neutral oak barrel for 6 months before bottling. This Gamay has aromas of fresh strawberry, raspberry, fruit punch and notes of spice and jalapeño. The palate is light and refreshing with flavors of red fruits and earthy notes. It has round tannins and a velvety and fresh finish. Chilled or at cellar temperature this Gamay it's a great wine for summer and lighter dishes. Because of its natural acidity and low tannin, it pairs well with a wide range of dishes, especially those with herbs and spices like spicy tuna rolls, or chicken with chimichurri, high fat content foods like cheeses and paté, and also with creamy risottos.
