This wine, comes from the most popular and traditional drink in Chile called "chicha", that's only grape juice, free flowed from lagar, commonly made in the harvest days, and drinked as it goes, or mixed with toasted wholegrain flour, or also distilled "aguardiente", anyway easy to produce juice, starting very sweet and a bit dense, and becoming lighter and spritz in days as yeast develops its natural process. Everyone has its preferences, but is a natural process, without intervention it will become dry and powerful. Chacoli is bottled with residual sugar, so is a "chicha", unfiltered, and fermented still during primary into bottle.
