Additional Information

Soft pressing of the grapes with decantation for 24 hours. Spontaneous fermentation in neutral oak with indigenous yeasts and aging in barriques for about 18 months.

The vineyard is worked organically, the vines picked by hand. They are divided between Chardonnay and Savagnin for the whites (90% of the production) and between Pinot Noir, Trousseau and Poulsard for the reds. Faithful to their convictions, the Buronfosse work their wines very naturally, minimizing technical interventions and, of course, oenological products. A more empirical than technological vinification while using modern tools. The result is wines that are totally sincere and frank, perfectly reflecting their terroir and the profiles of the vintages.
