Additional Information

Old-vine Chardonnay of 0.39ha planted in 1956, on Bajocien limestone with red clay. It was given to Peggy back in 2001 by neighbour Raymond Pageault. Whole cluster, direct press, spontaneous fermentation in neutral oak with indigenous yeasts. Elevage is ouillé for 18 months with its fine lees (in used casks.) It's the wine that started the domaine.
The vineyard is worked organically, the vines picked by hand. They are divided between Chardonnay and Savagnin for the whites (90% of the production) and between Pinot Noir, Trousseau and Poulsard for the reds. Faithful to their convictions, the Buronfosse work their wines very naturally, minimizing technical interventions and, of course, oenological products. A more empirical than technological vinification while using modern tools. The result is wines that are totally sincere and frank, perfectly reflecting their terroir and the profiles of the vintages.
