Additional Information

Spontaneous fermentation in neutral oak with indigenous yeasts. 18 months in neutral oak, sur lie. All three colours of Savagnin grapes, white yellow and pink, from massale origins planted on 0.31ha by us in 2006. The terroir is limestone scree with blue-gray marls, over limestone. Elevage is ouillé, on the fine lees, for 18 months (in used casks.). A powerful wine with subtle notes of nuts.

The vineyard is worked organically, the vines picked by hand. They are divided between Chardonnay and Savagnin for the whites (90% of the production) and between Pinot Noir, Trousseau and Poulsard for the reds. Faithful to their convictions, the Buronfosse work their wines very naturally, minimizing technical interventions and, of course, oenological products. A more empirical than technological vinification while using modern tools. The result is wines that are totally sincere and frank, perfectly reflecting their terroir and the profiles of the vintages.
