This ancestral method (petinallant naturel) Sparkling represents a Xarel·lo vineyard of 53 years old. By making this ancestral sparkling wine, I want to show the potential of ageing and gaining complexity that this profile of wines has.
Specifically, this wine has been 10 month ageing with the lees, with the objective of gaining mouth volum and certain yeast influence. After this month of lees ageing, was disgorged in orther to keep on evolving more, nevertheless, without giving more yeast profile and making the fruit the main character of this interesting sparkling wine.
