  • This wine is fermented spontaneously.
  • Other Information:Vines: 70% Sangiovese and 30% Procanico Fermentation and ageing for red grapes: following a careful selection, the grapes are stemmed and undergo spontaneous fermentation for about 10-15 days in steel vats, with pigeage three times a day. Ageing for approx. one year in steel and fiberglass vessels. Fermentation and ageing for white grapes: selection and whole-bunch soft pressing, followed by spontaneous fermentation in steel containers at a non-controlled temperature. Aged on the fine lees in steel containers for approx. 6 months. Malolactic fermentation carried out in the spring following the harvest, without the addition of adjuvants. No filtering during the bottling process; small amounts of sulphur may be added if required. The natural composition of the wine is not altered by any treatments. Aged in the bottle for approx. 6 months.
