Manual harvest in September
• Intensive vineyard sorting and de-stemming
• The most yellow and ripest grapes macerate for 1 - 2 weeks, the rest are pressed directly
• The musts are then combined mid fermentation, in stainless steel.
• The wine remains on lees without stirring until spring time, when bottling takes place.
Tasting Note: An exuberant wine that is pale amber in colour. Full of character, dry, tannic with aromas of yellow plums, dried flowers and more. A palate that is clean and fresh with salty acidity and good minerality.
