The Casale farmholding is situated on a hill to the north of the Elsa valley, close to San Gimignano ,Volterra and the sienese chianti zone. The specific area is actually mentioned in paleontological writings as it is rich in marine fossils from the Pliocene era, some of which are still visible and visitable today in the form of the “calanchi”, huge stalagtite type formations, natural erosions of the clay based soil surface. The farm dates back to 1770 and the company ledger details the annual harvests from that date to 1915, and still previously to that date there are traces that go back as far as the year 1000, which suggest that the original building was some sort of look-out tower, and even today there are remains of the ancient walls still standing in the deepest part of the cellars. Naturally the building has changed with the passage of the centuries to bring it to its current external appearance. We have been farming organically and biodynamically since 1980 and our produce bears the “Demeter” trademark from 1995. Our product range includes wine. Red, rosé, and white, sparking white ( spumante), vinsanto ( dessert wine), chianti grape flavoured and balsamic vinegars, grappa, oak matured grappa, brandy, extra virgin olive oil and pearl barley. Our wine collection consists of ; Chianti DOCG “riserva” 2005/2006 vintage Aged in casks of 40hl, it is made to the traditional blend of 98% sangiovese grape, 1% canaiolo, 1% colorino. It is a full bodied, smooth and well rounded wine, very much in demand, also due to is excellent vintage. Sangiovese 2000 A surprising combination of the freshness of the sangiovese grape with the roundness of the ageing in oak casks. Sangiovese 2014 The freshest of the sangiovese wines we produce, a flavour that has yet to be tamed,present with strong scents of green fruit. Sangiovese 2014 Rosé A scented gentle wine with a relatively low alcohol content ,it represents literally the first pressing of the fruits, is very popular with the ladies, and suitable for everyday consumption. Trebbiano 2004 A selection of late harvested pure trebbiano grapes, this wine is both fruity and fresh ,and perfect served with fish dishes and cheeses. Trebbiano 2014/15/16/17/18 A blend of Trebbiano grapes harvested at the end of September, again a well fruited palate recalling the season with scents of green apples and acacia flowers. This wine forms the base of our extremely popular “ gocce di luna” spumante, sparkling wine. “Gocce di Luna” Spumante ( sparkling white moon drops) Fermented from the 2016 trebbiano harvest, an intense flavour with a sophisticated perlage and scent, produced to classical Italian sparkling wine standards.
